I don't think the species of wood you're using is as important as whether it is properly seasoned. If you use wet wood, it can be easier to turn but the finished piece will almost certainly warp or crack if you do not season it at some point. I tend to prefer to use kiln dried wood for most of the things I turn since firstly I know that it is seasoned and secondly I find it tends to be more stable than air dried wood. Also I don't find it that much harder to turn than wet wood although I know of other turners who find kiln dried wood exceptionally difficult to work with.
